OK, so this is FAR from healthy. I created this for us to take to St Albans to help our Thanksgiving celebrations. It was lovely and as I am constantly reminding Tim, this considerably contributed to his lack of weight loss this week… Anyway, next time I will post some of the healthy dessert we had, but now here is the Cheesecake!

Ingredients

  • 300g digestive biscuits
  • 150g butter
  • 500g philadelphia cheese
  • 4 eggs
  • lemon or lime juice
  • 130g sugar
  • 2 tbsp plain flour
  • vanilla extract
  • 1 tin of strawberries in sugar sirup
  • 1 tin of raspberries

Utensils

  • 30cm diameter tray
  • whisk
  • spatula
  • blender
  • saucepan

Prepraration

Crush the biscuits using a processor, a knife or your hands and mix them with the butter previously clarified. Put the mix on the tray pressing with your fingers and take it into the fridge until you have the filling done.

Pre heat the oven at 180ºC. In a bowl add the cheese, sugar, vanilla extract and lemon juice mixing it with a whisk. Once it is done add the eggs one at a time, mixing well in between each one. Lastly add the flour and give it another whisk.

Take the tray form the fridge put the cheese mix in it and put it in the oven for about 40 minutes. In the meanwhile open the tins of fruit, blend them and put it in a saucepan to reduce for about 20 minutes in a low heat.

Once the cheesecake is turning a lovely golden brown colour it is done! Let it cool down, add the fruit sauce on the top and serve!
