OK, so those of you who like to study our pictures don’t look too close as you’re in danger of discovering our continuity errors. Always seeking to find a positive in everything I do I would hasten to add that this is such as simple, tasty recipe that even if you venture from the prescription you will not go far wrong… However, you might argue that this negates the need for a recipe at all… Well, stop over-thinking it 😛 Here it is:

Ingredients

  • A selection of tomatoes
  • Puff pastry, (shop bought is fine)
  • Sprinkling of salt and sugar
  • Mozzarella
  • Cracked black pepper
  • Roughly chopped garlic
  • Extra virgin olive oil
  • Balsamic vinegar
  • Rocket
  • Basil
  • Rosemary

Ingredients Pancakes (12-13)

  • 2 eggs
  • 1 cup of self raising flour
  • 1 1/2 cup of skimmed milk
  • 1/4 of tsp salt

Tomato sauce

  • 1/2 onion
  • 1 garlic clove
  • 1 chopped tomato tin
  • 1 vegetable stock cube
  • Olive oil, salt and pepper

Filling

  • 350-400g frozen spinach
  • 1/2 pepper
  • 1/2 carrot
  • 1 onion
  • 300g ricotta
  • grated nutmeg
  • 4 walnuts
  • 2 garlic cloves
  • olive oil
  • salt, pepper

Egg-free Meatballs with tomato sauce

Meatballs

  • 200-300g extra lean mince
  • 1 bread slice soaked in milk and crumbled
  • 2 cloves of garlic
  • 150g onion cooked for 3 minutes in the microwave
  • Parsley, salt, pepper, flour, olive oil.

Tomato sauce

  • 1 box of tomato purée with chilli, basil and oregano
  • 1 onion
  • 1 carrot

Ingredients for 4 people

Tomato and pepper topping

  • 2 tomatoes
  • 1/2 red pepper
  • Some red chilli (to taste)
  • 2 cloves of garlic
  • 3-4 leaves of basil
  • seasalt and seaweed
  • ground pepper

Preparation

Preheat oven to 130 celsius and place the chopped ingredients inside. Remove from the oven when tomatoes have shrivelled and the garlic has gone soft. After cooling remove the skin from the garlic and place ingredients in a blender. Blend to a smooth paste and leave…
