We went to Belsize Park last weekend. We love that area of London. Primrose Hill offers you a beutiful view of London and we enjoy a walk around the delis and coffee shops. Especially our favorite: Euphorium.
Primrose Hill was the place Freesia and I spent most of our early dates and what better way to find out each other’s love of coffee and cakes than in a little cafe within a short walk of this view:
OK, so Primrose Hill maybe filled with soya-schools, decaffeinated hair dyes, pushchairs made of marble and organic pavements but for people who like to cook, there is some really cool stuff there. A small market store contained these round courgettes/zucchinis which Freesia refused to leave behind. And I am glad she did not! As we had these fun little vegeta-balls 🙂
Ingredients

2 round courgettes
-
1 onion
-
300gr mince
- garlic
- 1 slices of goat cheese
- tomato sauce
- rice
- peas
- olive oil
- salt and pepper
preparation
Cut off the top of the round courgette and spoon the ‘meat’ out. Using a steamer, put them upside down and cook them for approximately 10 minutes until they are slightly under-cooked.
In the meantime, in a frying pan stir fry the onion, garlic, mince and courgette meat. Add some pepper and salt and some thyme or chilli if you like. Fill the courgettes with the mince, put a slice of goat cheese on top of each courgette and place them in a oven tray. Oven them for 3-5 minutes until the cheese is starting to melt.
I also made two easy side dishes by boiling some wild rice with frozen peas and making a tomato sauce.
You will not be disappointed with the look and taste of these items 🙂

This is also nicely done in Provence using a combo of lamb and pork and beef –along with minced onion, zucchini (corvettes), eggplant and tomato…You take all of the filling from the veggies that you’ve scooped out, and then mix it with the meat, add some egg, breadcrumbs or rice to bind, and a small amount of Parm! C’est excellent!

What a neat little dish – or side dish … round courgettes have I only seen in UK. Over here they look “normal” – what ever that can be. Really like this – so it will go on file.

Round courgettes … ??? I have only seen them in UK – what a pretty dish .. really like this – goat cheese I could eat everyday and especially grilled like here. Have to have a look for round courgettes. Thank you for this one.
