We went to Belsize Park last weekend. We love that area of London. Primrose Hill offers you a beutiful view of London and we enjoy a walk around the delis and coffee shops. Especially our favorite: Euphorium.
OK, so Primrose Hill maybe filled with soya-schools, decaffeinated hair dyes, pushchairs made of marble and organic pavements but for people who like to cook, there is some really cool stuff there. A small market store contained these round courgettes/zucchinis which Freesia refused to leave behind. And I am glad she did not! As we had these fun little vegeta-balls
2 round courgettes
- 1 slices of goat cheese
- tomato sauce
- olive oil
- salt and pepper
Cut off the top of the round courgette and spoon the ‘meat’ out. Using a steamer, put them upside down and cook them for approximately 10 minutes until they are slightly under-cooked.
In the meantime, in a frying pan stir fry the onion, garlic, mince and courgette meat. Add some pepper and salt and some thyme or chilli if you like. Fill the courgettes with the mince, put a slice of goat cheese on top of each courgette and place them in a oven tray. Oven them for 3-5 minutes until the cheese is starting to melt.
You will not be disappointed with the look and taste of these items
