So what is papillote? It is a method of cooking in which the food is put into a folded pouch or parcel (aluminium foil this time) and then baked.

It is a very healthy way to cook as you only use a tiny bit of oil so it doesn’t get stuck to the foil.

The rest of the ingredients will cook in their own juices and will absorbe all the flavours as they’ll cook with the steam of being in the foil bag 🙂 Delicious and low calory!

  • Salmon fillete
  • onions
  • carrots
  • lemon
  • red pepper
  • green pepper
  • garlic
  • chives
  • salt
  • pepper
  • olive oil

Place some foil on an oven tray (big enough to cover your ingredients). Put some olive oil on the bottom so the ingredient don’t get stuck to the foil.

First put the salmon and then all the vegetables on top. As you can see I used my brand new mandolin to cut the onion in to rounds and the rest of the vegetables into batons.

Once you have all the ingredients on top of the fish, close the foil so you get a closed parcel and dont lose the juices.

After 20-25 minutes in the oven at 200ºC take it out, open your parcel and serve it. You can serve with more vegetables, this time fresh ones!

Hope you can make your own Pappillote and as always let us know how it goes!
