“I know, I know –  there are so many soups appearing on our blog at the moment you might say that there’s not much room for any more. However, I would argue that there  is as mushroom  as we want to demonstrate this little fun-guy of the liquid-lunch world 🙂

Walnuts?! in a soup? Yes, you read correct. They are not just tasty but eaten in the correct quantity will provide helpful cholesterol-lowering acids to your body

Ingredients for 4 people

  • 1 onion
  • 250g mushrooms
  • 2 garlic cloves
  • 1 vegetable stock cube
  • 200g walnuts
  • olive oil
  • salt, pepper


Chop the onion and garlic and sauté them with some olive oil in a saucepan. When onion is transparent, add the mushroom and cook it for 5 minutes. Add the stock cube with 1 pint of water and cook for 20 minutes.

Finally add the walnuts finely chopped and cook it for another 5 minutes. Take off the hob and blend it. Think of a way to present it – I used a drizzle of olive oil and some roughly chopped chives!
