As you may know, I made a delicious Onion marmalade (check the recipe here) a couple of weeks ago, with decorated jar and label 😉 (check the photo here). So as part of the finger food lunch starter we prepared for Tim’s family, I made this Spanish tapa: Goat cheese and onion marmalade.
You can change the sweet part of this recipe for caramelised onions, tomato jam, apple relish or a simple fresh tomato and basil.
- Bread (tiger bread, ciabatta, french bread, etc)
- Goat’s cheese
- Onion marmalade
- olive oil
Slice the bread in to rounds of 1cm thick. Place them on an oven tray with a bit of olive oil for 5-10 minutes. Cut the cheese in to rounds of less than 1cm thick and when the bread slices are brownish put the cheese on the top. Place the tray in the oven again for 5 minutes or until the cheese starts to melt. Take the tray out, put a tsp of onion marmalade on the top of each bread slice and serve!
