Ingredients

  • 1 large courgette
  • 100g dry lentils
  • 2 garlic cloves
  • 1 onion
  • 3-4 spring onions
  • 1 vegetable stock cube
  • 2 pints of water
  • 1-2 bay leaves
  • 2 tbsp olive oil
  • salt, pepper

Praparation

1. Chop the garlic cloves, onion and spring onions and sauté them in a saucepan. Add a pinch of salt.

2. Meanwhile put the lentils in another saucepan and boil for 10 minutes.

3. Chop the courgette and add it to the first saucepan with the onion and garlic. Stir and cook for 5 minutes.

4. Pour the lentils with the water to the vegetables. Add a bay leaf and a vegetable stock cub. Cook for 20 minutes until lentils are soft.

5. Remove the bayleaf and blend the remaining mixture. Ladel in to a bowl and serve with some garnish to your pleasure!
