It was snowing early this morning, it’s almost Christmas…. so I felt like baking something. I remembered my Grandma’s biscuits with that lemon and vanilla flavour and thought it would be nice to wait for Tim this afternoon with a coffee and some warm biscuits 😉
- 2 cups of flour
- 2 eggs
- 125g sugar
- 150g reduced fat spread
- 30ml skimmed milk
- vanilla extract
- lemon zest
Like almost all the best cook books will tell you, when it comes to patisserie you have to mix the liquid ingredients first (eggs, milk, vanilla extract) and then add the solids (flour, butter, sugar, lemon zest). Once you get the dough, wrap it in cling film and put it in the fridge for 10 minutes to rest. Turn on the oven at 200ºC.
Get the dough out of the fridge, roll it to a depth of 5mm and cut it into rounds, squares, triangles or whatever you like. Place the biscuits in a oven tray previously buttered and floured, then paint them with a whisked egg and sprinkle some sugar.
Get the oven tempeture down to 180ºC and put the biscuits in it for 20 minutes until they are golden brown.
