Ingredients for 4 people

Tomato and pepper topping

  • 2 tomatoes
  • 1/2 red pepper
  • Some red chilli (to taste)
  • 2 cloves of garlic
  • 3-4 leaves of basil
  • seasalt and seaweed
  • ground pepper

Preparation

Preheat oven to 130 celsius and place the chopped ingredients inside. Remove from the oven when tomatoes have shrivelled and the garlic has gone soft. After cooling remove the skin from the garlic and place ingredients in a blender. Blend to a smooth paste and leave…

Sweet potato cylinder

  • 2 sweet potatoes
  • 1 baking potato
  • 1/2 an onion
  • olive oil, salt and pepper

Preparation

Parboil the peeled and diced potatoes and drain well. Chop the onion into small pieces and place into an oiled pan adding the potatoes to the caramelising onion. Make sure that the pan is not overloaded (cook in batches to avoid uneveness). Add salt and pepper to taste. When cooked allow to cool before placing the portions in oiled cooking rings. Reheat in the oven prior to serving.

Pea puree

  • peas
  • philadelphia cheese (we used the one with garlic and chive)

Cook the peas (steamed or microwaved) and place in a blender with a teaspoon of philadelphia cheese. Blend into a purée… Easy Cheesey Peasy!

Cod

  • cod
  • lemon
  • salt and pepper

Preparation

Look at the above picture… I bought unskinned, boneless cod… And oh my COD was it easy to prepare. Season, add lemon and pan fry until crispy on the outside. We fried some kale with olive oil and salt as well (careful you don’t set your house on fire) and used it as a bed for the cooked fish.

Dishing up…

Serve as pretentiously as possible… This was popular with the family and (because a few items were on sale) I reckon it cost, with these portions around £1.40 each…
